Champagne Bourgeois-Diaz has been crafting exceptional wines in Crouttes-sur-Marne for four generations, with roots stretching back to the early 20th century. Born in 1977, Jérôme Bourgeois-Diaz represents the fourth generation of this family of Champagne growers. While tradition runs deep in his veins, so does the drive to innovate. With Spanish ancestry on his mother’s side, Jérôme has always been compelled to explore new directions, creating Champagnes that reflect both heritage and individuality.
Jérôme tends 7 hectares of vines—Pinot Noir, Pinot Meunier, Chardonnay, and Pinot Blanc—averaging 40 years of age, scattered across 30 parcels in Crouttes-sur-Marne and neighboring communes. Planted on calcareous soils with south-west exposure, these vineyards have been meticulously cared for over four generations. In 2009, Jérôme embarked on a decisive turn toward organic and biodynamic viticulture, embracing micro-ferments and respecting the natural ecosystem of each site. His vineyards, now certified Demeter, thrive without herbicides or chemical sprays, standing as an oasis of life amid the surrounding conventional farms.
In 2016, Charlotte, Jérôme’s wife, joined the domaine, becoming a vital partner in both brand and quality stewardship. Together, Jérôme and Charlotte combine deep-rooted tradition, meticulous craftsmanship, and a spirit of innovation, producing Champagnes that are at once pure, expressive, and intriguingly complex.
NV Champagne ‘Trois Cépages’ Brut Nature
This is a masterclass in “three cépages” (varieties) at their finest. Seemingly a little austere at first, it reveals layers of fruit and subtle earthiness, both deep and light. The wine offers sophistication, spice, and a precision that embodies everything a true Champagne drinker seeks.
Winemaking
The Bourgeois-Diaz Brut Nature is crafted from three grape varieties: Pinot Meunier (40%), Pinot Noir (40%), and Chardonnay (20%). All grapes were harvested from estate plots together to ensure balance and harmony. Fermentation was divided between stainless steel (40%), oak (30%), and concrete (30%), and the wine was aged on lees for 24 months. Bottled as a brut nature, it contains no dosage, allowing the purity of the fruit and terroir to shine.
Tasting Note
Balanced and expressive, this Brut Nature combines freshness with depth. Juicy red and white fruit notes mingle with subtle earthy undertones, while spice and texture give structure and vibrancy. Light yet sophisticated, it is a refined Champagne that rewards both early tasting and longer contemplation.
NV Champagne ‘Le Temple’ Blanc de Blancs Brut Nature
This Champagne is fashioned on the banks of the still Marne River, grown on vines edged into clay, silt, and chalk, cultivated without pesticides since 2009 and certified organic and biodynamic since 2014. Harvested from the revered single plot “Le Temple,” it is perhaps the purest expression of Chardonnay from this site. The wine combines finesse with an ample style, offering surprising tension and a delicate, fine bitter tang that reflects the unique terroir.
Winemaking
The Champagne BD’B Blanc de Blancs is made from 100% Chardonnay grapes harvested from “Le Temple,” with its distinctive calcareous marl soils. The juice was partially fermented in stainless steel (66%) and partially in neutral oak (34%). The wine spent a minimum of 24 months on lees and is bottled as a brut nature, meaning no dosage was added, allowing the purity of the fruit and terroir to shine.

2018 Champagne BD’3CC ‘Trois Cépages’ Collection Brut Nature
This wine is the culmination of years spent perfecting a blend of three noble Champagne grapes, selecting the best barrels from a single vintage. The result is enthralling, capable of rivaling the finest still wines on the table. With Chardonnay forming the core, supported by Pinot Noir and a touch of Pinot Meunier, it shows exceptional cellaring potential. Extended maturation of up to 60 months on lees confers enormous complexity, balanced with freshness and presence.
Winemaking
The Champagne BD’3CC is crafted from three grape varieties (cépages): Chardonnay (40%), Pinot Noir (40%), and Pinot Meunier (20%). All grapes were harvested from estate plots in 2015 and vinified together. Fermentation was split between stainless steel (50%) and oak (50%), with the wine spending up to 60 months on lees. Bottled as a brut nature, no dosage was added, allowing the purity of the fruit and the vintage expression to shine.
Tasting Note
Full-bodied and expressive, this Champagne combines depth and finesse. Intense fruit flavors mingle with subtle earthiness and spice, while the long lees aging adds texture and richness. The “rosé de saignée” base gives the wine a striking color, powerful structure, and a fruit-forward profile reminiscent of a fine red wine, making it perfect both on its own and paired with red meat or tomato-based dishes.
2018 ‘Les Justices’ Champagne 100% Meunier
This vintage Champagne is one of the most distinctive expressions from the Bourgeois-Diaz estate, crafted to highlight the unique character of the “Les Justices” terroir in Crouttes-sur-Marne, Champagne, France. Produced from carefully selected old-vine fruit, it reflects the domaine’s commitment to organic and biodynamic viticulture, as well as low-intervention winemaking.
Winemaking
Les Justices 2018 is vinified with a highly artisanal approach. The wine comes from the assembly of two horizontal 350L sandstone eggs, a rare vessel choice that enhances micro-oxygenation and textural precision. Ageing is carried out under natural cork rather than crown cap, encouraging gentle evolution and complexity. After disgorgement, the wine is carefully tied and finished with minimal dosage, preserving its purity and terroir expression.
The 2018 vintage, marked by warmth and ripeness in Champagne, provides both generosity and structure, while the estate’s hands-off philosophy ensures the vineyard character remains at the forefront.
Tasting Note
Straw yellow in colour, this opens with an evolved aromatic profile, evoking the oxidative, nutty nuances of the Jura. Notes of dried fruits, toasted almond, and subtle spice emerge on the nose.
On the palate, the oxidative character is restrained, adding layers of complexity without overpowering freshness. The texture is refined and saline, with remarkable sapidity and finesse. A vibrant acidity carries through to a long, precise finish, leaving an impression of both tension and elegance.
2019 ‘Les Bien Aimees’ Champagne 100% Pinot Noir
Les Bien Aimées is a singular cuvée from Bourgeois-Diaz, crafted as a tribute to some of the estate’s most cherished old-vine parcels in Crouttes-sur-Marne, Champagne, France. Produced in very limited quantities, this vintage Champagne highlights a powerful yet refined expression of terroir, shaped by organic and biodynamic viticulture and a deeply artisanal approach in the cellar.
Winemaking
This cuvée is vinified entirely in a 25 hl wooden oak cask and aged under natural cork rather than crown cap, a deliberate and uncommon method that encourages gentle oxygen exchange and the development of layered complexity. Following disgorgement, the bottles are traditionally tied, reinforcing the house’s commitment to craftsmanship. Made from 100% Pinot Noir, the wine is bottled with zero dosage, allowing the full character of the fruit and site to shine through.
Tasting Note
Golden yellow, the nose reveals generous aromas of fresh pastry and toasted brioche.
On the palate, the wine expresses a confident vinosity, with richness and structure balanced by a core of ripe fruit. The texture is supple and enveloping, with Pinot Noir lending depth and power, while natural freshness maintains tension throughout.
